Cookie Recipe
Ingredients
- 3 cups dry Irish oatmeal (such as McCann’s)
- 3 cups whole-wheat flour
- ½ cup packed brown sugar
- ¼ tsp. salt
- 2 ½ cups unsweetened applesauce
- 1 cup corn oil
- 12oz. molasses
Preparation
Preheat oven to 325 degrees.
In a large bowl combine the dry ingredients and stir. Add the remaining ingredients to the dry mixture and stir until well combined. The batter should be thinner than normal cookie dough.
On a greased cookie sheet drop approximately 2 tablespoons of cookie dough and arrange about 2 inches apart. Try to keep the same thickness throughout the dough.
Bake for approximately 35 minutes. Since oven temperatures vary, bake the cookies until the edges turn slightly brown. You want to bake the cookies for as long as possible without burning them. The end result should be a hard cookie that is slightly softer in the middle.
Cool cookies on the sheets for 5 minutes and transfer with a metal spatula to racks to cool completely.
Store cookies in airtight containers at room temperature.
Makes about 60 horse cookies
Helpful Hints
If you cannot find Irish oatmeal, you can substitute with old-fashion rolled oats (such as Quaker).
The brown sugar cannot contain any hard lumps. To breakup the lumps, grind them in a food processor. |
